Honey-Garlic Chicken

Prep Time: 10 minutes Pressurization and cooking time: 20 minutes Total time: 30 minutes

Yields: 6 servings

3 boneless, skinless chicken breasts

Salt and pepper, to taste

1/2 cup honey

1/2 cup ketchup

1/4 cup brown sugar

1/2 cup soy sauce

2 tablespoons vegetable oil

1 tablespoon minced garlic

1/2 onion diced

1/4 cup water plus 1 tablespoon, divided

1 tablespoon cornstarch

6 cups hot, cooked rice

Sesame seeds, for garnishing

Chopped green onions, for garnishing

Directions:

  1. Season chicken with salt and pepper and set aside

  2. In a small mixing bowl, whisk together honey, ketchup, brown sugar, soy sauce, vegetable oil, garlic, onion, and 1/4 cup water.

  3. Arrange chicken in the insert of a multicooker and pour sauce over the top.

  4. Secure the lid and make sure the valve is pointing up to SEALING.

  5. Press MANUAL (or press PRESSURE COOK and select HIGH PRESSURE) and adjust time to 20 minutes.

  6. When multicooker signals the end of cooking time, press CANCEL, and then quick release the pressure by turning the valve down to VENTING with the handle of a wooden spoon or other device to prevent the steam from burning your hands during the release.

  7. Remove chicken from the multicooker and cut into bite-sized pieces; set aside.

  8. In a small bowl, whisk together 1 tablespoon water and cornstarch; whisk cornstarch into the sauce in the multicooker.

  9. Press SAUTÉ and cook 5 minutes, stirring constantly until thickened.

  10. Press CANCEL and fold in cooked chicken.

  11. Serve chicken and sauce over rice, and garnish with sesame seeds and green onion.
