Kendra’s Chocolate Covered Krispies

“One stormy night, Kendra placed a few of her favorite things on the kitchen counter for breakfast: Cocoa Krispies cereal, chocolate chips, and peanut butter. After a tedious stretch in the attic listening to thunder rattle the shingles, she awoke the next morning to find this crunchy treat waiting for her.”

Butter, shortening, or nonstick baking spray

6 cups toasted puffed rice cereal, such as Rice Krispies or Cocoa Krispies

1 cup creamy peanut butter 

1 cup sugar

1 cup light corn syrup

2 cups milk chocolate chips (or semisweet if preferred) 

  1. Grease a 9X13 pan.

  2. Pour cereal into a large bowl. In a medium saucepan, add peanut butter, sugar, and corn syrup. Bring to a boil, stirring constantly. 

  3. Pour the hot peanut butter mixture over the cereal and mix well. Pour the mixture into the greased 9X13 pan and spread evenly, pressing down gently. 

  4. Melt chocolate chips in a microwave-safe bowl. Heat in 30-second increments, stirring between, until smooth.

  5. Pour the melted chocolate over the cereal mixture in the pan and spread into an even layer. Allow to cool and set before cutting and serving.
